SWEET & SPICY

As requested by my friend Lauren from Maybeads, one of my favorite lampwork critter shops, here is my recipe for sweet and spicy Cinnamon Logs or Sweet Potato Candy...



1/2 cup butter, softened


1 tsp vanilla extract


3 1/2 cups powered sugar


1/4 cup cinnamon


Directions: Cream the butter together with the vanilla extract until smooth. On low speed, gradually add the powdered sugar. Once all of the sugar is added, it should look crumbly and lumpy. At this point, you should be able to form the dough into a nice BIG ball. Pinch off small portions of dough and roll into litle balls, then roll the balls into a log shape. If you keep the ends blunt they are called Cinnamon Logs, if you keep the ends pointy, you can call them Sweet Potato Candy. It's all about the shape.


Let the candies sit a room temperature to harden, about an hour or so. Once they are hardned roll them in the cinnamon. That's it.


The taste of the spicy cinnamon melting into the buttery sugary log becomes a smooth sweet treat with a hint of sharp spicy cinamon in the background...DELICIOUS!...

Yum! I have all the ingredients, too - love that. My family is crazy for cinnamon (always on their sliced apples in their lunches), so these will be a hit for sure. Thanks, Eileen!
