Fresh Basil Pesto
2 cups fresh basil leaves
1/2 cup freshly grated Parmesan-Reggiano or Romano cheese
1/2 cup extra virgin olive oil
1/3 cup pine nuts or walnuts
3 medium sized garlic cloves, minced
Salt and freshly ground black pepper to taste.
Method
1. Combine the basil and pine nuts in a food processor or blender, pulse a few times...If you are using walnuts make sure they are chopped before adding to the basil...Then add the garlic, pulse a few times more...You may need to scrap the sides a few times in between your pulsing...
2. Slowly add the olive oil in a constant stream while the food processor is on...Stop again to scrape the sides with a rubber spatula...Add the grated cheese and pulse again until blended...Add a pinch of salt and pepper to taste...
Makes about 1 cup...
YUM YUM YUM...Serve with pasta, over baked potatoes (my fav) or over a toasted baguette slice...Trust me, this is good on anything!...Enjoy...

Oh, Eileen, When I first moved to CA, I fell in love with pesto and put it on EVERYTHING. My family accused me of only feeding them pesto when they would come visit!

This recipe looks delicious! I might grow some basil just so I can use my own fresh basil to make pesto.
