SALAD IN A JAR?

i saw this idea posted on Facebook a long time ago and totally forgot about it...this morning my neice, Marla, posted it to her Facebook page...so, i thought i would share this on my blog with my followers and friends...also, so i don't forget to do it...

GREAT IDEA...
Utterly brilliant. Not only does SALAD IN A JAR save space in your fridge, it also reduces food waste.

THE ARRANGEMENT
From BOTTOM to TOP:

Dressing
Shredded carrots
Cherry tomatoes
Sunflower seeds
Hard boiled eggs
Baby spinach

DIRECTIONS

1) Arrange ingredients in a large mason jar
2) Store in fridge for up to a week
3) When ready to eat: shake jar, place on a plate, and eat!

You can make any arrangement you want… you can add red onion, cucumbers, radishes or peppers. Always remember to put the dressing at the bottom and the lettuce at the top—a MUST.

****NOTE**** If your making a few salads at a time for the week, you MUST remember to vacuum seal the Mason Jars. (Mason jars can be bought at Wal-mart, and various grocery stores) They must be vacuum sealed to remain fresh and crisp :) Here are two different ways to vacuum seal a mason jar :D

Delicious Carrot Ginger Tofu (Apple) Soup

I know it's been a long time since I've posted on my blog...Way too long...Maybe this will spark me to post more often...

I posted on FB a delicious soup I made for dinner and several people asked for the recipe...I thought this would be the best way to put the recipe out there and made it available to whoever wants to try it...Remember, I used a Vitamix so if you do not have a Vitamix please refer to the bottom of the recipe for a few helpful tips...


Carrot Ginger (Apple) Tofu Soup
2 cups chopped carrots
¼ small onion, peeled, chopped
4 garlic cloves, peeled, chopped
2 tbsp olive oil
½ tsp salt
Pinch of white pepper
1 tbsp fresh ginger root, chopped
1/3 cup light silken tofu
2 cups vegetable broth

*I added a left over baked apple to the veggie sauté. You can add a chopped apple and a dash of cinnamon as well.
Heat olive oil in a pan and sauté all ingredients except for tofu and broth. Saute until onion is clear and carrots are a bit tender, about 5-7 minutes. Add a little broth as needed to help soften veggies. Place veggies into a blender. Add broth and tofu. I use a vitamix blender starting at #1 and slowly increase to #10 and let it blend for 3 minutes. Soup will be piping hot and ready to serve.

**if you don’t have a vitamix or high speed blender, you will need to add veggies to large pot, then add broth and tofu and use an immersion blender to get the velvety consistency…OR…add sauted veggies, broth and tofu a little at a time in your blender to get the velvety consistency.
